Hello and happy Easter Monday folks, did you survive the break this weekend?
Are you full of chocolate?
I had a busy day at work on Saturday followed by a nice relaxing Easter Sunday, family viewing on TV, chilling out, a lamb dinner and an egg hunt in the garden. My eldest boy did protest as he is getting too old for egg hunts but went along with the promise of chocolate!
The clues as where to look have got harder and harder. I have to admit that hubby created a couple of cryptic ones this year that even had me stumped. He must be on the same wavelength as the boys as they got them.
You are never too old to enjoy an Easter egg.
Whilst hubby cooked the lamb I set to work on some homemade mint sauce. I am not a big fan of lamb but he loves it. My mum used to always ask me if I wanted lamb with my mint sauce as a kid, in my eyes it is the only reason to have lamb. I don't think you can beat mint sauce with roasties. Yum. Strange but true. I was surprised at how easy it was to make too, I certainly won't be buying it again.
I had bought some lovely strawberries from work and had it in my head that I wanted to do a strawberry tart.
When I worked in Edinburgh, the nearest shops were at a place called Corstorphine, on the outskirts of the city.
At Corstorphine there used to be a lovely tiny little bakers that made the most amazing strawberry tarts and we would always get cream cakes to celebrate birthdays at work.
Mmmm. Nice. Whilst shopping last week I popped into Allarburn Dairy farm shop for some eggs and found the strawberry topping for tarts. That got my head thinking, a nice quick dessert for Easter.
Here is the results.
Looks yummy doesn't it, it was. I can't really take much credit for it though as the pastry base was bought as was the jelly so all I did was whip the cream and add, cut the strawberries and then add the jelly. A super quick and yummy pud. I need to remember this next time we have friends over, it's so easy. Only the my youngest son wouldn't try it, it had fruit on! He is allergic to most fruit and veg! I have tried every trick in the book and nothing works regardless what the experts say.
I also got these beautiful flowers from my best pal.

Hubby had offered to get me an egg, he's a big kid at heart and just like the boys. I'm sure he was just angling to see if I'd got him one. He'd got me a small lindt egg, my favourite chocolates.
My boss at work at left a chocolate bunny for me, which was a lovely surprise and I enjoyed munching it yesterday. Thanks Roma. x
We have enjoyed a variety of flavoured hot cross buns from work too in the run up to Easter, our favourite flavour this year being the fudge and chocolate ones. I haven't purchased enough of them for the boys apparently this year.
Little do they know that I bought a few extra and am currently hiding them in the freezer.
They won't think to look for them there.
That's all from me today, I've had a craft free couple of days over the weekend, I think quite a few of you will have done the same. It has been quiet on-line. The weather has been beautiful up here until a quick bout of hailstones last night after tea. I believe those of you down south haven't been as lucky and have had quite stormy weather this weekend.
I hope it hasn't been too bad for you?
Can you believe whilst your having all that bad weather today, in the North of Scotland the sun is out and there isn't a cloud in the sky. Ok it isn't warm but bright and sunny will do me fine.
Enjoy the rest of your Easter break, back to work for me tomorrow and Wednesday, I better get organised.

Glad to hear you've been enjoying your Easter break and only a bit jealous that you got an egg and a chocolate bunny. Hubby thinks it's all a rip off and never buys me one. Mind you he did leave me some cash to spend before he left for the weekend, so I shouldn't complain! Love the strawberry tart, it looks gorgeous. Hubby hates strawberries which is such a shame (not) considering we have some in the garden. He calls them poisonberries. I just have to share them with the slugs! Cara x
Sounds like you've had a lovely Easter weekend even if you did have to work, as there was chocolate involved I'm sure it made it bearable :)
Lovely tart, looks scrumptious, I've been hooked on sweet pancakes, blueberries and creme fraiche since I saw a recipe in the Aldi booklet a few week ago but I added a gloop of golden syrup too just to be extra naughty - needless to say this is a dessert you can't indulge too often.
Hope you continue to have the sunny weather, we've been rather battered and blown this weekend and today it rained very hard. My poor garden looks dishevelled and muddy.
