Now for something completely different.....today's post is edible!

Good morning.
Yes I'm posting before work, I must have been organised this morning!  Shock, horror.
At the weekend in work we were raising funds for Prostate cancer, this involved us bag packing, cycling and wearing blue front of house but we also had cakes, tombola and other lovely eats backstage for break time.
I was asked to bake so this is what I took.


Firstly Cadbury's creme egg muffins, a chocolate muffin with a mini egg inside, topped with butter icing and creme egg.


Lemon meringue pie muffins, with lemon curd inside and meringue icing.  I did have mini meringue toppers to add but after giving a wee blast with my blow torch I decided less was more!
These are my favourite muffins just now and there was enough meringue mixture left to make these for tea.


This is actually the first time I have made meringues.  I've never bothered as my BFF makes the best meringues so I have never needed too.  Lazy I know.
I was very pleased with the results for a first attempt, crispy on the outside and chewy inside, just how I like them.

That's all from me, I did manage my man mountain of ironing yesterday and I didn't need to get a new iron either, bonus!
As for today, I'm in work after I've got everyone to work and school then afterwards maybe the usual housework.  Hopefully I might just squeeze a little crafting in.

These look yummy Erika though sadly I wouldn't be able to eat them on my gluten free diet. I made a GF Brack loaf earlier but it's just not the same! Carol x

Really scrummy! They look really tasty Meringues are my favourite with lots of whipped cream!
